Located in the heart of the village of Ollon, in a beautifully renovated historic building, the restaurant L’Hôtel de Ville is run by Audrey Feutren-Halgand, pastry chef, and Grégory Halgand, executive chef.
The couple met at the Relais Bernard Loiseau and settled in the heart of the Vaud Chablais region four years ago.
Since then, they have earned one Michelin star in 2023 and were named Romandy Discovery of the Year in 2024.
The chef specializes in seafood dishes and flavorful, seasonal French cuisine.
