First it was love at first sight, then it was fire! In love with the region, Romain Paillereau chose to invest in the mythical Bourguillon establishment, Les Trois Tours, in early November 2021.

The chef, awarded a Michelin star and the title “Romand de l’année” by Gault&Millau, served his last dishes at the Pinte des Mossettes in Cerniat in December 2020. Since then, he has been modelling and fine-tuning his project to take over the Trois Tours.

Each month, a different menu awaits gourmets. As the seasons go by, guests discover new dishes concocted by the chef and his team with the most local ingredients possible, echoes of the land and producers.

Creative and inspired dishes, which touch by their subtlety and their accuracy.

A new setting awaits the guests of the restaurant Les Trois Tours in Bourguillon. If the building’s shell has remained intact, the interior has been redesigned.

Noble and sober materials echo the delicacy of the dishes, a soft and deliciously hushed atmosphere promising surprising and gourmet moments.
