For Martin Dalsass, the “master of olive oils”, the future means going back to nature just as lightness and simplicity work in synergy in Mediterranean cuisine. When it comes to his style of cooking, his philosophy is primarily based on the quality of the products, using them authentically, retaining their own flavours and using the purest olive oils.
