In the picturesque hamlet of Champfèr, near St. Moritz, stands one of the oldest farmhouses in the Engadina valley, dating back to 1658 and now home to “Talvo”. For Martin Dalsass, the “master of olive oils”, the future means going back to nature just as lightness and simplicity work in synergy in Mediterranean cuisine. When it comes to his style of cooking, his philosophy is primarily based on the quality of the products, using them authentically, retaining their own flavours and using the purest olive oils.
