New hosts, the usual incomparable quality: Lisa Carlevero and Kevin Fernandez are the next generation to take over. In November 2024, the host couple took over the reins from their long-time mentor Martin Dalsass and are now continuing his legacy together with a fresh eye and the same understanding of quality.

Kevin Fernandez (head chef and host) is as decisive as he is subtle in the kitchen. Born in Valais with Spanish origin, he began his culinary career at the age of 16 as a commis de partie at the Hotel Gritchting in Leukerbad. From Ticino to Graubünden, he continued to develop his craft at various locations before starting at the former “Talvo by Dalsass” in 2015. Since then, he and his special sense for the fruitful combination of Mediterranean-influenced cooking and typical Grisons hospitality have been indispensable.

Lisa Carlevero (hostess) has been looking after the well-being of guests at Talvo since 2016 and has shaped its outstanding service. The Piedmont native speaks four languages and came to Champfèr via Ticino. As hostess and maître, she is now responsible for the warm hospitality and perfect interaction between kitchen and service. Lisa’s confident savoir-faire, her eye for detail and for the big picture complement Kevin’s culinary skills to create a genuine culinary experience for her guests in a relaxed atmosphere.
