Frédéric Boucault is a student of Edgard Bovier who held the reins of “La Table d’Edgard”, one of the restaurants of the “Lausanne Palace”. Bovier retired at the beginning of 2020 and has since been the hotel’s culinary advisor.

The close collaboration between the two chefs is reflected in the inspirations and philosophy of the restaurant of the “Hôtel de Rougemont & Spa”, where an authentic, tasty and sunny cuisine is offered under the title “Sea and Mountain”.
